Polynesian Pork
2 pounds lean pork tenderloin (cut into bite-sized pieces)
1 can (20 ounce) pineapple chunks
1 bell pepper (sliced)
2 tablespoons lite low sodium soy sauce
Instructions
Spray skillet with non-fat spray and brown pork tenderloin-bite sized pieces. Add pineapple chunks, bell pepper and soy sauce.. Simmer in covered skillet for 45 minutes. Remove cover, stir and simmer 15 more minutes. This is great served over rice. (Rice not included in nutritional information or WW points.) Makes 4 servings
