| Drain pears, reserving juice. Combine the juice with soy, cornstarch, mustard and lemon peel.
Cook and stir over medium heat until thickened. Keep the sauce warm. Remove the skin from the
chicken and any fat. Place in a baking pan. Brush chicken with the lemon juice mixture. Bake at 350 degrees for 30 minutes; basting frequently. Turn the chicken pieces and bake 20 minutes longer or until done. Add the pears during the last 10 minutes. To serve, arrange the chicken and pears on a platter. Serves 4.
