| Whole Wheat Bread #2 |

2 cups lukewarm water
1 package dry yeast
1/4 cup honey, brown sugar, maple syrup
1/2 cup oil
1 1/3 cup oats
4 cups whole wheat flour
1 tablespoon salt
3 to 5 cups flour

| Instructions |
| Mix water and sweetener till dissolved. Add yeast and stir till dissolved. Let stand about 5 minutes.
Mix in oil. Mix in oats and stir well. Mix in whole wheat flour and stir about 100 strokes. Cover and let rise about 1 hour.
Drop salt into batter. Add 2 cups white flour and stir well. Continue to add white flour 1 cup at a time until your arm is too tired to stir. Put 1-2 cups flour on the counter and dump dough onto the flour. Dump another 1-2 cups flour on top of the dough and press it with your hands. Use the heel of your hand and push down and then fold over. Push down and fold over. Keep doing this until the dough is not sticky and you feel it pushing back at you. Put enough oil in the mixing bowl to coat the sides and put the dough back in. Rub the top of the dough with oil. Cover and let rise 1 hour.
Punch the dough down. Dump onto counter and divide it into however many loaves you are going to make. Knead each loaf 5 to 10 minutes before putting it in the pan. Cover and let rise 1/2 hour.
Preheat the oven to 450 degrees. When you put the bread in, lower to 350 degrees. Bake bread about 1/2 hour or until you hear a hollow sound when you thump it gently. |
