| Eastern North Carolina Pulled Pork Bbq Sandwiches |

3 lb boneless pork roast 2 cups apple cider vinegar 1/2 cup ketchup 1/8 cup Worcestershire sauce 1 Tbl. brown sugar, packed down 1 Tbl dijon mustard 1 Tbl salt 1 Tbl dried crushed red peppers (rub in palm of your hand to release the oils) 1 tsp. black pepper 1 Tbl. hot sauce |

| Put roast in crock pot. Mix all other ingredients together and pour over. Cook on low 8-10 hours. Remove and pull meat apart using two forks. Return to crock pot, mixing with sauce to keep warm. Serve on buns. Here in North Carolina we like Cole slaw on top, but serve it on the side for those not ready to try this. And yes, Emerald Isle is the best, our summers are spent there!
