Cinnamon Apple Salad
3/4 c. red cinnamon candles
2 c. water
6 tart apples, pared and cored
1 (3-oz) pkg. cream cheese
2 tbsp. milk
1 tsp. lemon juice
1/3 c. chopped dates
1 (9-oz) pineapple tidbits, drained
2 tbsp. chopped walnuts
Lettuce leaves
Instructions
Cook candies in water till dissolved; add apples and cook slowly, uncovered, till tender, about 15 to 20 minutes. Turn once during cooking. Chill in syrup several hours; turn once while chilling. Blend cream cheese, milk and lemon juice; add dates, pineapple and walnuts. Drain apples; place on lettuce leaves. Stuff centers with cream cheese mixture. Yield: 6 servings.
