Southwest Chicken Soup
1 chicken breast1-1/2 qts. chicken broth2 onions, chopped1 tbsp. butter1 1/2 tsp. grated onion2 c. chopped zucchini1 c. drained whole kernel corn1/3 c. tomato paste2 oz. cream cheese, cut in sm. cubes2 avocados, sliced
Instructions
Combine chicken breast, broth and onion in a large pan. Cover, bring to boiling, reduce heat and cook 30 minutes. Remove chicken, dice and set aside, reserving broth. Heat butter and grated onion in a large saucepan; stir in zucchini and corn. Cook about 5 minutes. Just before serving, mix in diced chicken, cream cheese and avocados. Serves 6-8
