Lime Zucchini Marmalade Recipe
4 c. coarsely shredded zucchini (about 2 lbs.)2 c. water1/2 c. fresh lime juice (about 4 limes)1 pkg. powdered fruit pectin5 c. sugar3 tbsp. sliced lime peel
In a large Dutch oven, combine zucchini, water, lime juice and peel. Bring to boil and boil gently for 10 minutes. Stir in pectin, return to boil. Stir in sugar. Return to a hard boil that cannot be stirred down. Boil stirring constantly for 2 minutes. Remove from heat, stir 5 minutes to keep fruit from rising. Ladle into hot sterilized jars and seal.
