Dilled Zucchini Quiche
1/2 lb. grated zucchini4 eggs lightly beaten or egg substitute1-1/2 c. sour cream1/2 c. grated Swiss cheese, low fatCrumbled bacon, substitute if wanted1 (9 inch) pie shellSalt, ground pepperFresh chopped dill (1 tsp.)Salt substitute
Preheat oven to 375 degrees. Place grated zucchini in a colander and sprinkle with light salt. Let stand 1 hour. Add dill and sour cream to eggs, salt and pepper added. Squeeze juice from zucchini by wrapping in cheese cloth. Sprinkle zucchini and bacon crumbs on bottom of pie shell. Add egg and cheese mixture. Bake 40 minutes. Serves 6.
