Spinach Squares

Spinach Squares
4 tablespoons butter (1/2 stick butter)
3 eggs
1 cup flour
1 cup milk
1 tsp. Salt
1 tsp. Baking soda
1 pound grated sharp cheddar cheese
2 - 10 ounce frozen chopped spinach (thawed) (place in colander and
squeeze out liquid)
1 small onion grated (or onion powder or onion flakes to taste)
Instructions
Melt butter in 9 x 13 glass dish in the oven. When melted, tilt dish to cover the bottom. Mix rest of ingredients in a bowl. Pour into melted butter. Bake in a preheated 325 degree oven (350 degree oven if using metal) for 35 minutes or until lightly brown and set. Cool slightly and cut into 1 1/2 inch squares. May be made a day or so ahead and re-heated in the microwave. Taste good warm or at room temperature. This may be eaten as a side dish with meat, chicken or fish, or may be used as an appetizer for finger food when cut in smaller squares. Good either way.
