Blackeyed Peas
16 oz. frozen black eyed peas
2/3 c. peanut or olive oil
3 tbsp. red wine vinegar
1 sm. onion, chopped
1 to 2 cloves of garlic
Handful of parsley
Cracked pepper
Salt free seasoning
Instructions
Place peas in a lg. saucepan, cover w/water. Blend together w/oil, vinegar, onion, garlic & parsley. Season w/pepper & seasoning. Bring to a boil & simmer only till peas are tender.
