Bean Stew
1/2 lb Great Northern beans
1 beef bone
1 ham bone
4 slices bacon, cut into small pieces
1/2 tsp paprika
1 medium onion, diced
1 lb potatoes, peeled and diced
salt and pepper to taste
Instructions
Soak beans in water, covered, overnight. Drain beans and put into a soup pot with ham and beef bone. Add 3 quarts of water. Bring to a boil them reduce heat to low and simmer for one hour. Fry bacon pieces lightly until fat is liquid and clear. Add paprika and onion and cook slowly until onion is lightly browned. Add onion and bacon mixture to the soup. Add diced potatoes to the soup and season with salt and pepper. Cook until beans and potatoes are tender.
