Spinach, Bacon & Apple Salad
1/4 cup olive oil
3 tbsp wine vinegar
1 tsp sugar
1/2 tsp mustard
salt and pepper
5 slices bacon
1/3 cup sliced almonds
1 lb fresh spinach, washed, stemmed, dried and torn into bite sized pieces
1 unpeeled red apple, cored and coarsely chopped
3 green onions, sliced thin
Instructions
Combine first four ingredients with salt and pepper to taste in a jar with tight fitting lid, shake well. Refrigerate until ready to use.
Cook bacon slices in large skillet over medium high heat until crisp. Drain on paper towels. Crumble and set aside. Discard all but one tablespoon of fat from skillet. Add almonds to skillet, shake pan over medium high heat until nuts are lightly toasted. Combine spinach with bacon, apple, onion and almonds, toss lightly. Shake dressing, pour over salad and toss again. Serve.
