Preheat oven to 350 F.
Wash celery, remove leaves. Cut each stalk into thirds. Combine celery, beef consomme, pepper, and 1/4 cup of water in an oven proof medium saucepan and bring to a boil over medium heat. Place saucepan in oven and bake, covered, for 25-30 minutes. Use a slotted spoon to remove celery to serving dish. Strain the cooking liquid, then stir in butter and pour over the celery. Sprinkle with chopped parsley.
Goes well with fish.
