Hot Potato Salad
6 medium potatoes
3 eggs, hard cooked
3 strips side bacon
1 tablespoon chopped onion
1 1/2 tablespoons celery
1/2 cup mayonnaise
salt and pepper to taste
sprig of parsley
Instructions
Cook potatoes, peel and cube. Dice two of the hard cooked eggs. Chop side bacon and fry. Add chopped onion and celery; cook till limp. Combine potatoes, eggs, mayonnaise salt and pepper with onion and celery. Heat through, stirring constantly. Remove from heat. Garnish with remaining egg and sprig of parsley. Serve hot.
