Cornbread Dressing
1 red bell pepper, seeded, cubed
8 tbs salted butter
1 cup chopped green onions
1/2 pound ham steak, cubed
8 cups cubed cornbread, toasted
1 cup chicken broth
2 tbs Dijon mustard
Instructions
Preheat oven to 350 degrees. In skillet, cook bell peppers in butter 3 min. or until tender. Stir in green onions and ham. Cook 2 min. In bowl, combine ham mixture and cornbread, spoon into greased 13x9" baking dish. In bowl, combine broth and mustard. Pour broth mixture over cornbread mixture. Cover. (Bake 30 min.). Uncover, cook 10 min. more or until golden brown, then serve.
