Rocky Road Fudge 2
7.5 oz jar marshmallow cream
12 oz bag bittersweet chocolate chips
1 cup mini marshmallows
1 1/2 cups chopped salted macadamia nuts (any nuts will work)
1/2 tsp each salt and vanilla
2 1/4 cups sugar (Splenda)
5 oz can evaporated milk
1/4 cup + 1 tbs salted butter
Instructions
Grease 9" square baking pan with 1 tbs butter. (In saucepan), bring marshmallow cream, milk, sugar, salt, vanilla and remaining butter to a boil. Reduce heat (cook 5 min.) more. Remove from heat. Stir in chocolate. Let sit 5 min. stir until smooth. Stir in nuts and marshmallows, pour into pan. Let cool completely. (Cut into squares), then serve.
