Macrobiotic braised pumpkin
500 g pumpkin, cut into 3 cm squares
1 leek cut into pieces long 2 cm
5 cm fresh root ginger
pinch of sea salt
garlic
1 ½ teaspoon lemon juice
1 tablespoon of chopped parsley
two teaspoons of sesamy oil
Instructions
Heat the oil and fry the leek for a few minutes. Add pumpkin, a little salt, add 100 ml of water, cover and cook on lowest heat, without stirring, for about 20 minutes. Peel and grate the ginger, and squizze the juice in pan. Add chopped garlic and lemon juice, stir carefully and cook for three minutes. Sprinkle with chopped parsley and serve with cooked rice.
