Pumpkin Gnocchi
900 g pumpkin
250 g of white potatoes
100 g wheat semolina
200 g flour
Instructions
Cut the pumpkin in half, peel and clean it and bake in the oven at 220 degrees for about 40 minutes, or until completely soft. During this time, wash the potatoes and cook them in the shell, in salted water, about 30 minutes. Rinse the potatoes, peel them and squeeze into a puree. Mix mashed pumpkin with potato puree, stir in grits and flour. Add salt to taste. From the obtained mass make some dumplings and arrange them on a plate sprinkled with flour to dry out and stand for about 1 hour. Cook in a large quantity of salted water until they emerge to the surface (about 5 minutes). Serve as an accompaniment to meat or with spiced butter, sprinkled with Parmesan cheese.
