Chicken stuffed squash
4-5 little butternut squashes
500 g finely cut chicken breasts
1 red onion
2 red peppers
1 / 2 teaspoon salt
Olive oil
Thyme , pepper (white), rosemary, salt
Instructions
Wash and cut the pumpkins in half, without peeling them. Mix olive oil with spices and cover the inside of every squash with thin layer of a mixture. In a pan put 2 tablespoons of oil, finely chopped onions, peppers and chicken cubes, fry for few minutes and finaly add 0.5 ml of water or chicken soup. Spice. Simmer 30 minutes stirring occasionally. Fill the squashes and bake them for 30 minutes, then cover them with cheese and bake for another few minutes. Serve with salad.
