Add 2 tablespoons oil in a pot and add the beef. Simmer until brown. Remove the meat. Add the remaining oil in pan. Add onions and garlic. Simmer for 1-2 minutes or until tender. Add the curry sauce, stir, cook for 30 seconds, add the meat. Stir in squash, peppers, tomatoes and broth. Cover and let cook for 10 minutes. Remove the lid and let cook for another 10-15 minutes or until meat is tender and sauce is thick. Season with salt and pepper. Serve with rice.
