3 1 / 2 cups of mashed sweet potatoes
1 / 4 cup milk
1 / 4 cup orange juice
2 eggs
1 teaspoon vanilla extract
1 / 2 cup sugar
1 / 2 teaspoon salt
3 tbs butter, softened
1 / 2 tsp ground nutmeg
1 / 2 teaspoon ground cinnamon
1 / 4 cup softened butter
3 / 4 cup brown sugar
1 / 2 cups flour
3 / 4 cup chopped walnuts
Preheat oven to 175 C. Grease a casserole dish. In large bowl mix sweet potatoe puree, milk, orange juice, eggs, vanilla, sugar, salt, butter, nutmeg and cinnamon. Pour into prepared pan.
Mix 1 / 4 cup butter, brown sugar, flour and nuts, sprinkle over sweet potato mixture - bake at 175° C for about 45 minutes.
