Green beans with sweet potato and bacon
4 C young green beans
2 C bacon
¾ C olives
1sweet potato
4 carrots
parsley
2 onions
1 ¼ C chicken broth
salt, pepper
Instructions
Cook green beans in salted water for about 15 minutes and drain. Add sweet potatoes cut into cubes. Melt butter and fry the bacon, adding 1-2 tablespoons of chicken stock. Add carrot slices and finely chopped onions. Cook until the carrots are tender. Add the green beans and potatoes, and remaining soup. Season and simmer. Sprinkle with chopped parsley.
