Thai Chicken Legs
1 medium onion, thinly sliced
4 each chicken drumsticks and thighs, skin removed
1 large red bell pepper, sliced
14.5 oz can diced tomatoes with jalapenos
1/3 cup creamy peanut butter
2 tbs each lime juice and soy sauce
1/2 tsp ground ginger
8 oz snow peas
1/4 cup mint leaves, cut in strips
1/4 cup chopped peanuts

Instructions
Put chicken on onion in a (slow cooker). Add bell pepper. Mix tomatoes, peanut butter, lime juice, soy sauce and ginger in a bowl, pour over top of chicken. Cover and cook (on low 7 hours) or until meat is tender. Stir in peas, cook 15 min. or until peas are crisp tender. Sprinkle each serving with mint and peanuts, then serve.
