Chocolate Peanut Butter Rocky Road Clusters
16 ounces semi sweet baking chocolate, chopped
3 Tablespoons peanut butter
1 1/2 cups corn flakes, (not frosted)
1 1/2 cups mini marshmallows
1/2 cups dry roasted peanuts
Instructions
Line two sheets with parchment paper. Melt chocolate and peanut butter in the top of a double boiler over medium heat. Combine your corn flakes, marshmallows, and peanuts in a large bowl. Add the melted chocolate. Mix gently but throughly with a rubber spatula. Using 2 tablespoons or a #20 ice cream scoop, make clusters about 1-2 inches apart. Refrigerate until firm.
