Lawry's Enchilada Casserole
2 tbsp. salad oil
1 med. onion, chopped
4 c. cooked, shredded chicken
2 (15 oz.) cans tomatoes, drained & chopped
1 pkg. Lawry's taco spices
1 dozen corn tortillas
2 cans ripe olives, sliced
3 c. shredded Jack cheese
Instructions
Saute onion in oil, add chicken, tomatoes and spices. Bring to boil and simmer 15 minutes. In 9"x13" pan layer 4 tortillas, top with chicken mixture, olives and cheese. Repeat 2 more times. Bake in 325 degree oven until heated through 30 to 45 minutes.
