3/4 cup fine dry bread crumbs
2/3 cup grated Parmesan cheese
4 tablespoons minced parsley
1/4 teaspoon pepper
1 cup (2 sticks) margarine, melted
1 clove garlic, crushed
2 teaspoons salt
3 chicken breasts, halved and boned
1/3 cup lemon juice
Combine bread crumbs, Parmesan cheese, parsley, and pepper on large sheet of wax paper. Combine margarine, garlic, and salt in mixing bowl. Dip chicken into margarine, then into crumb mixture, coating thoroughly.
Roll each piece up tightly and skewer with a toothpick. Arrange chicken pieces in a casserole. Sprinkle with lemon juice and drizzle with remaining butter.
Cover with waxed paper. Microwave on medium-high for 12 to 15 minutes or until tender. Let standd covered 5 minutes before serving. Sprinkle with paprika.
