Sweet Potato Carrot Cake
2 c. sugar
2 c. plain flour
1 tsp. vanilla
3 c. grated carrots or sweet potatoes
1 1/2 c. oil
2 tsp. salt
4 eggs
2 tsp. soda
1 1/2 tsp. cinnamon
Instructions
Sift flour, soda, salt and cinnamon. Add sugar and oil. Beat eggs and add to mixture. Add carrots or sweet potatoes. Bake at 350 degrees for 40 minutes. Use cream cheese icing.
