In a mixing bowl, beat the eggs. Add oil and pumpkin; beat until smooth. Combine remaining ingredients in separate bowl; gradually beat into pumpkin mixture. Pour batter into two greased
8-in. x 4-in. x 2-in. loaf pans. Bake at 325 degrees for 75-80 minutes, or until a toothpick inserted near the center comes out clean. Cool on wire racks. NOTE: Bread can also be baked in five greased 5-in. x 2 1/2-in. x 2-in. loaf pans for 50 to 55 minutes.
