Chicken Breasts Florentine
1 (10 oz.) pkg. frozen chopped spinach (or equivalent amount of fresh spinach)
3 tbsp. margarine
4 skinless, boneless chicken breast halves
2 tbsp. canola oil
1/2 c. Progresso Italian bread crumbs
2 oz. (1/2 c.) shredded Mozzarella cheese
1 tbsp. finely diced onion

Instructions
Cook spinach and onion in microwave and follow directions on package. Squeeze to drain. Stir in margarine; set aside. Place chicken breasts, boned side up, between 2 pieces of plastic wrap. Gently pound with flat meat mallet until 1/4" thin. Press each side of chicken into bread crumbs. Heat oil to medium high in large teflon coated skillet. Cook chicken to lightly brown on each side. Place chicken on microwave plate or rack. Spoon spinach evenly over each piece of chicken. Microwave on high 2 to 3 minutes. Sprinkle with cheese, microwave on High for 1 to 1 1/2 minutes until cheese is melted. 4 servings.
