Potato Skins
6 med. potatoes (about 2 lbs.)
1/4 c. melted margarine
1 tsp. soy sauce
Instructions
Preheat oven to 400 degrees. Scrub potatoes thoroughly and pierce with a fork. Bake until tender (about 45 minutes). Cool, then cut in quarters lengthwise and then half crosswise to form 8 sections. Scoop flesh from skins leaving 1/8-inch shell. Increase oven temperature to 500 degrees. Mix margarine and soy sauce together and brush on both sides of the skins. Place on baking sheet and bake until crisp (about 10 minutes). Serve sprinkled with coarse salt and your favorite dip.
