1 lb. frozen shrimp (cooked)
2 c. diced celery
1/2 c. sliced water chestnuts
2 eggs, hard boiled and chopped
2 tbsp. grated onion
1/4 c. mayonnaise
2 tbsp. lemon juice
1/2 tsp. salt
1/2 c. sharp cheddar cheese (grated)
1 c. crushed unsalted potato chips
Combine shrimp, celery, water chestnuts, and eggs. Blend mayonnaise, lemon juice, salt, and onion. Stir into shrimp mixture. Place in a greased casserole dish (8x11). Top with cheese and potato chips. Bake at 400 degrees for 20 minutes or until bubbly..
