In skillet, pour about 1 tblsp cooking oil and add rice, stir around to heat rice as if browning it, add salsa and water, stir real good and let come to boil, remove from heat, cover tightly and set aside for about 15 minutes, remover cover, fluff and serve. This process only takes app 5 minutes, but tastes wonderful. Heat up some refried beans with melted cheese, and serve the rice and chicken with the corn bread, very very filling, and good.
