I use leftover mashed potatoes any amount, egg, onion, green pepper, salt and pepper. Mix well and if you need to add some potato flakes to make a firm mixture then add some. Shape into patties and instead of flour I use the potato flakes. Cook in the hot oil until golden brown and turn over and cook the other side. Put the patties on paper towels to drain. Serve warm with any topping that you want with them.
