Southwestern Fried Chicken
8 boneless chicken breasts
1 c. tomato juice
Salt
Pepper
1 tsp. onion powder
1 tsp. chili powder
1 tsp. cumin
1 tsp. oregano
1 tsp. paprika
2 c. diet bread crumbs
Instructions
Salt and pepper chicken. Coat with tomato juice and marinate in refrigerator 2 hours or overnight. Mix spices in bag with bread crumbs. Place chicken in bag and shake until coated. Bake at 375 degrees for 45-60 minutes.
