Microwave Enchilada Casserole
10 corn tortillas
1 lg. can plain chili
1 lg. onion, chopped fine
2 c. grated Cheddar cheese
1 sm. can green chilies
1 sm. can diced tomatoes and green
chilies
Instructions
Cover bottom of 8 x 8 inch glass or microsafe casserole with tortillas. Next layer chili, onions, chilies. Put another layer of tortillas and repeat. When all is in casserole, pour tomatoes and green chilies over all. Cover and microwave at high for 11 minutes - uncover and cook 2 more minutes. Let cool about 5 minutes and serve.
