1 1/3 c. Minute rice
1 1/3 c. water
1 tsp. salt
1 1/2 tsp. butter
3 eggs
2 c. grated American cheese or Swiss
2 (6 oz.) cans tuna in water, drained
3/4 c. milk, scalded
1/8 tsp. nutmeg
1/8 tsp. pepper |

| Instructions |
| Make crust in 9-inch pie plate with 1 egg, beaten in. Layer cheese, tuna, cheese, tuna. Blend salt, 2 eggs, milk, nutmeg and pepper. Pour over tuna. Bake at 400 degrees for 25 minutes. |
