1/3 head iceberg lettuce 1/2 med. onion 2 med. potatoes 3 carrots 2 c. fresh spinach 2 eggs, well beaten 1 c. flour 1/2 tsp. salt Pepper to taste 4 tbsp. butter or margarine 4 tbsp. oil Sour cream
Grind, blend, or finely process lettuce, onion, potatoes, carrots, and spinach. Add well-beaten eggs. Sift together flour and salt and fold into vegetable mixture. Add pepper to taste. Drop by spoonfuls into heated, greased pan and cook until golden brown. Serve with sour cream. Serves 4.
