1 8oz. pkg. cream cheese, softened
2 c. leftover or instant mashed potatoes
2 well beaten eggs
1 small finely chopped onion
1 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. bread crumbs
Preheat oven to 350. Grease a 1 1/2 quart baking dish. Combine cream cheese, potatoes, eggs, onion, flour, salt and pepper together and whisk together for 3 - 5 minutes. Pour into the baking dish and sprinkle with bread crumbs. This is where you can cover and freeze for later use or you
can bake it now, for 25 to 30 minutes.
