Barbecued Meatloaf
1-1/2 pounds ground beef
1 cup fresh bread crumbs (about 3 slices white bread)
1 small chopped onion
1 egg
1 1/2 teaspoon salt
1/4 teaspoon black pepper
1 8 ounce can tomato sauce
1 6 ounce can tomato paste
1/2 cup water
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons mustard
2 tablespoons Worcestershire sauce
Instructions
Mix together ground beef, bread crumbs, egg, onion, salt, pepper, tomato sauce and paste. Pour into a 9 X 13 inch dish and shape into a flat loaf. Leave about an inch between the dish and loaf. Pour water around this. Mix together vinegar, brown sugar, mustard and Worcestershire sauce. Pour over meat loaf. Bake at 350* for 1 hour. Note: I usually take this out of the oven about 15 minutes before it is done and drain off the fat and then return it to the oven. I also like to take the end of a wooden spoon and poke holes in the loaf before I pour the sauce over. That way the sauce will seep down into the loaf.
