1 tbsp. mustard 1/2 tbsp. salt 3 tbsp. sugar Few grains of cayenne 4 tbsp. flour 1/2 c. vinegar 2 eggs, beaten 1 -1/2 c. milk 2 tbsp. butter |

| Instructions |
| Mix mustard, salt, sugar, cayenne and flour in top of double boiler; add vinegar and eggs slowly. Add milk; cook over boiling water until smooth and thick, stirring constantly. Cook for 15 minutes longer. Remove from heat; add butter.
Yield: 1 pint. |
