Emerald Dressing
1 c. salad oil
1/3 c. salad vinegar
1/4 c. chopped onion
1/4 c. minced parsley
2 tbsp. confectioners' sugar
1-1/2 tsp. salt
2 tsp. dry mustard
Dash of red pepper
2 tbsp. finely chopped green pepper
Instructions
Combine all ingredients in jar or blender. Cover; let stand for 1 hour. Shake for 5 minutes to blend. Serve with seafood, cottage cheese or
tossed green salad.
Yield: 1-1/2 cups.
