1/2 head small green cabbage, finely shredded (about 3 1/2 cups)
2 Tbls. minced red onion
1 large carrot, peeled and grated
1/4 cup mayo
1/4 cup sour cream
1/4 cup cider vinegar
1/4 cup sugar
salt and freshly ground black pepper, to taste
Another good accompaniment to lobster, or just about any summer menu.
Blend mayo, sour cream, vinegar and sugar in medium bowl. Add cabbage, onion and carrot and toss to mix thoroughly. Taste; season with salt and pepper as needed. Refrigerate at least 2 hours for flavors to develop. Keeps in refrigerator (covered) 2 days.
