2 pts. crushed pineapple 1 c. sugar 2 pts. cold water 1 c. grated cheddar cheese 1 1/3 tbsp. lemon juice 2 tbsp. plain gelatin 1 c. whipping cream
DRESSING: 1 tsp. poppy seed 1 c. mayonnaise 1 oz. honey
Heat pineapple juice and water, add lemon juice, sugar and gelatin (gelatin soaked 5 minutes in cold water). Stir until thoroughly dissolved. Cool mixture and when it is beginning to set, add pineapple, cheese and stiffly beaten cream. Mix well. Place in pan. Chill until firm. Place on lettuce leaf with Poppy Seed Dressing.
